Tips for Choosing the Right Slow Cooker

Those in the 1- to 1.5-quart category are great when cooking for one or making dips, while 2.5 quarts and larger is best for cooking for two to three or those who prefer leftovers.

Slow cookers range in capacity, from a compact 1.5 litres up to 7 litres. As a general guide, a 1.5 to 2.3-litre capacity is great for two people, a larger 4 to 4.5 litres will feed four, and 5.5 to 7 litres is ideal for four to six people.

“Small slow cookers such as the 1 to 1.5-quart models are a great option for those cooking meals for one,” says Grainer. “Whether you're entertaining at home or bringing food to share, small slow cookers are easy to transport and will keep dips, appetizers, sides, and sauces warm.”

If you'd like a little more room for leftovers or the ability to cook for a few guests now and then, a 3 1/2 to 4 1/2-quart pot is big enough for most medium-sized dishes. For a family of three to five or a leftover-obsessed couple, a 5 to 6-quart slow cooker is the perfect size.

However, Crockpots generally have ceramic or porcelain pots, while most slow cookers have a metal pot. As with a lot of cooking appliances, the biggest difference comes from the distribution of heat.

The difference between "High" and "Low" on slow cookers seems to differ with every brand and model. One thing that is consistent, though, is that food takes seven to eight hours to reach a simmer point (around 210°) on low; versus three to four hours on high.

Fish, shellfish, oysters and clams need to be cooked quickly. Obviously, slow cooking isn't quick, and it will obliterate these delicate proteins. The only seafood exceptions are squid and octopus because they tend to be tough meats and slow cooking makes them tender.

Is it safe to leave a slow cooker on for 12 hours? Yes, you can use your slow cooker for longer than eight hours, as long as you keep an eye on it. Many slow cookers do have an automatic shutoff after 24 hours.
