How to Make Fiesta Beef Casserole in a Crock Pot

Ever have one of those days where you just need an easy win? Surely, I am not the only one. Well, today was one of those days. So, this Fiesta Crock Pot Beef Casserole (which was inspired by this recipe) was a must. It is so easy to put together and delicious to boot!

If you use either our Crock Pot Make Ahead Ground Beef or our Instant Pot Ground Beef (Batch Cooking) recipes ahead of time, that will make this recipe one you can throw together in just a few minutes. Even without having your ground beef ready ahead of time, this is still a super quick prep meal…and this is coming from a person who could probably set records for how slow she is when prepping a recipe. Combine that with the 2 hour cooking time when cooking on high, and you can throw this together after work!

The Doritos are optional. My family loves the addition to this recipe. They add an extra little kick of flavor as well as a wonderful crunch. This recipe was a big hit at my house!

What You Will Need

Ingredients Needed

  • 1 lb ground beef
  • 1 small onion, diced
  • 15 oz can black beans, drained, but not rinsed
  • 1 cup mild salsa
  • 3/4 teaspoon garlic powder
  • 10.5 oz cream of chicken soup
  • 10 oz diced tomatoes with green chiles, drained
  • 2 cups Mexican blend cheese, divided (1/2 cup in mixture, 1.5 cups on top)
  • Doritos, crushed, optional

  • Prep Time: 10 minutes
  • Cooking Time: 3-4 hours on low or 1-2 hours on high, turning your insert halfway through cooking if your slow cooker does not cook evenly

  • Brown your ground beef with your onion and drain

  • Combine your browned ground beef, black beans, salsa, garlic powder, soup, tomatoes and 1/2 cup of shredded cheese

  • Spread your mixture in a lightly greased 4 quart slow cooker

  • Top with remaining cheese

  • Cover and cook on low for 3-4 hours or high for 1-2 hours, turning your insert halfway through if your slow cooker does not cook evenly

  • Serve hot over a bed of crushed Doritos, if desired
