Smothered burritos are an easy dinner, made in 45minutes with your Instant Pot or pressure cooker. Spicy red sauce (also known as chili Colorado) and shredded cheddar cheese are smothered over beef burritos, creatinga delicious meal your family will love!

I sawthis smothered burritosrecipe on Pressure Cooking Today, and knewimmediatelythat I wantedto make itin my Instant Pot. I acquired an Instant Pot in November after hearing so much about them for months. With an Amazon gift card burning a hole in my pocket, I decided to take advantage of a great Black Friday sale!

Now if you have been following along for a while you may know that I already have an electric pressure cooker- and I do. It’s a Cuisinart that I love. But the hype man- I fell for it…and I am glad I did!

Similar to a pressure cooker, an Instant Pot cooks foods under pressure, but in amucheasier way! Where the Instant Pot differs from the Cuisinart (that I have) are the choices of buttons. This really makes the cooking easier. Now I will admit there are not a lot of resources out there for using the Instant Pot so I have joined a group on Facebook where users share tips, ask questions and share recipes that work. I also rely on the website Pressure Cooking Today for guidance. That is where I found this smothered burritos recipe.

The beef in the smothered burritos is rump roast. Beef shoulder orany other roast cut of beef works well, as long as it has some fat in it. Otherwise, it is likely to become over cooked and dry. Like in the recipe from Pressure Cooking Today, I cubed my meat. Alternately, if you are pressed for time, you can use pre-cut stew meat.

This is a good time to point out one thing about the Instant Pot: It is not a MAGIC POT. Meaning you can’t just throw in raw ingredients, push a few buttons and out pops a world class meal. You need to exercise a bit of food safety, common sense and kitchen knowledge. Like anything that comes near food- start with a clean pot, lid, valve and seal. Watch out for the HOT HOT steam that comes out AND be careful with what you put in ie: raw meat, dairy. Start with the recipes that come with the instant Pot or from their website and go from there. Practice, make them your own. Keep in mind that this is a PRESSURE cooker. Meaning on top of the active cooking time you will need to allow time beforehand for the pot to come to pressure. This varies.

Having said this- the Instant Pot is easy to use and a real time saver. I have even used the slow cooker function and cheated on my crock pots.

Beef rump roast, cooked to tender perfection in an Instant Pot (or pressure cooker), then rolled into flour tortillas and smothered in red enchilada sauce and cheese.

Ingredients

  • 3 lbs. boneless beef rump roast, cubed
  • 16 oz. enchilada sauce, divided in half
  • 2 beef bouillon cubes or 2 teaspoons beef base
  • 1/2 cup water
  • 12 burrito-size flour tortillas
  • 2 cups shredded colby jack cheese (or any kind you like)

Instructions

  1. Add beef, half of the enchilada sauce, bouillon cubes and water to the Instant Pot. Select High Pressure and set the timer for 30 minutes. When beep sounds, turn off pressure cooker and use a natural pressure release for 10 minutes and then do a quick pressure release to release pressure. When valve drops carefully remove lid.
  2. Turn oven on to broil setting.
  3. Line a rimmed baking sheet with aluminum foil. Place one flour tortilla onto the sheet and add approximately 1/2 cup beef to the center of the tortilla. Fold in the sides and starting at one end, roll up into a burrito. Repeat with remaining tortillas. Top with enchilada sauce and shredded cheese. Broil until cheese is bubbly, about 2-4 minutes.
